Everyone loves pancakes, and banana pancakes with blueberries are even better!
This recipe is super simple but to make it even easier, just make one large pancake, instead of lots of little ones.

- 2 eggs
- 1 banana
- 10 blueberries plus for garnish
- Few drops of vanilla essence
- Pinch of salt
- Coconut oil for frying
- maple syrup

Instructions
- Mash the banana, whip the eggs and stir it together.
- Add the blueberries.
- Heat some coconut oil a frying pan, and add the batter mix - flip if you dare!
- When it is finished, fold the pancake and top with syrup and blueberries.
Recipe Notes
Maple syrup is not refined like regular sugar and retains some fibre which helps to slow the release of sugar into the blood.
