Healthy mince pies

A healthy indulgence for the holiday season, this mince pie recipe is refined sugar free and made with all natural dried fruit and nuts to include healthy fat, protein and fibre!

Instructions
Mince Filling
  1. Place raisins, dried cranberries, currants, dates, apple, orange rind, orange juice and spices in pot.
  2. Add just enough water to cover the fruit. Bring to a boil, lower heat, cover and simmer for 1 hour.
  3. When cooking is finished, stir in walnuts and apple concentrate. Set aside.
  4. Preheat oven to 170 C / 375 F.
Pastry Crust
  1. When mince is cooking, make the crust by adding all ingredients into a food processor, then chill in the fridge for approx 30 minutes.
  2. Divide into 2-3 pieces, and roll them out between two pieces of parchment (baking) paper. Then use a pastry cutter (approx. 9 cm) to cut your pastry casings.
  3. Oil muffin tray and add pastry. Cook for 5 minutes, then using a star cookie cutter, cut out star-shaped pieces of pastry.
  4. Spoon the mince into the baked pastry and cover with your stars!
  5. Bake for 20-30 minutes, or until the topping is lightly golden.
