Healthy Shepherd’s pie

Instructions
  1. Bottom Layer: Heat the olive oil in a large saucepan and add all the meat. Fry the meat until it is completely brown. Then add the water, leeks, apple cider vinegar and all the spices. Cook this on low heat for about 1/2 hour until the water has evaporated and the leeks are cooked. While the meat is cooking you can work on the other two layers.
  2. Middle Layer: Boil water for the greens and once the water is boiling, slightly steam the veg. This should take about 5 minutes. When these are cooked just set aside for later.
  3. Mash: Now, for the mash you can roast or boil the potatoes. Boiling takes less time, but to roast: put them on a roasting pan in the oven on 180 C/350 F for about an hour. To boil put in a pot of boiling water for about 20 minutes. Once these are cooked put them in a bowl and mash them up with the almond milk and nutmeg.
  4. Once each individual layer is prepared you can now make the layers. Put the meat layer on the bottom of the pan (1/3 the way up). Then put a hefty amount of greens to cover the top of the meat. Lastly, put the mash layer on top. Then put in the oven on the same heat for 1/2 hour. When finished, sprinkle with parsley.
