This healthy mayo free coleslaw is a great addition to your lunchbox and tastes even better the next day so save time in the morning by making it the night before.
Grate the cabbage, carrot and celery into thin strips on a mandolin slicer and add the other ingredients. Let your coleslaw sit for 10 minutes.
Roast the pumpkin seeds and chopped hazelnuts lightly in a dry pan. When the pumpkin seeds begin to pop, take the mix off the heat and pour in a bit of tamari, then sprinkle on your coleslaw.
TIP - Coleslaw tastes really nice with a piece of fresh plaice, sprinkled with freshly picked parsley.
