Soba noodle salad & prawns

Experiment with buckwheat noodles in this super simple salad. They are often easier to digest than traditional pasta and provide the body with a host of micro-minerals and fibre. Prawns are a great source of protein and contain lots of immune supporting zinc! Mange tout adds a nutritious, delicious crunch and this creamy dressing is full of healthy fats to make this meal totally balanced and filling, you won’t miss pasta with this dish!

Instructions
  1. Cook the soba noodles as per the package
  2. To cook the prawns, slightly fill a saucepan with water and bring to a boil. Add shrimp to the boiling water and cook for 3 minutes, until the prawns are pink.
  3. When the prawns are done cooking, add the mange tout for 1 minute until slightly steamed.
  4. Drain and rinse the prawns and mange tout.
  5. When soba noodles are done cooking, mix together with shrimp and mange tout.
  6. Sprinkle with sesame seeds.
  7. To make the dressing combine all dressing ingredients in a blender or food processor and blend.
