Chia seed pudding

Chia seeds are a great source of fibre and those key anti-inflammatory omega 3 fats. When soaked, they absorb water to form a jelly-like consistency, which you may find a little strange… but trust us, it’s worth it!

Instructions
  1. Add a couple of tablespoons of chia seeds to a small ramekin and cover with the coconut milk, you can also experiment with other milks, or even try kefir.
  2. Give the mix a good stir to make sure all the seeds are coated.
  3. Cover with whatever toppings you like and store in the fridge for at least 2 hours until the seeds have formed a gel like texture.
  4. This one is so tasty and nutritious, feel free to enjoy as a snack or dessert.
Recipe Notes

Tip – Try mixing raw cacao or coco powder in with the coconut milk for a chocolatey twist.
