We all know how to scoop out an avocado and mash it on toast but with this superfood, omega 3 packed loaf, you get extra healthy bonus points! It might seem like hard work but it’s totally worth it – make a batch on Sunday and it will see you through the week.
Preheat the oven 350 F / 180 C / Gas mark 4 and grease a 7.5” x 3.5“ loaf tin with coconut oil.
Combine the arrowroot powder, almond flour, ground flaxseeds, salt and baking soda in a mixing bowl.
In a separate bowl, beat the eggs with a hand whisk (or whizz up in a blender) until super thick and frothy.
Stir honey and vinegar into the eggs, then fold in the dry ingredients until well combined, lastly, fold in the sesame and sunflower seeds.
Pour batter into prepared loaf tin and bake for 40 mins.
Leave to cool for 10-15 minutes before removing from the tin.
Then to make the tastiest breakfast ever - simply toast a couple of slices, mash up your avo, spread it on top and drizzle with extra virgin olive oil. Add a squeeze of fresh lemon juice and salt and pepper to taste.
Tip – spice goes really well with avocados so try garnishing with fresh chilli and coriander or even a splash of Tabasco.
